Let’s start with some context for how milk becomes yogurt:

  1. Yogurt is produced by the fermentation of milk by beneficial bacteria (aka probiotics).
  2. Fermentation is the process of sugars being converted into alcohol or organic acids by bacteria or yeast.
  3. Lactose is the main sugar in milk. (Fun fact: the suffix “-ose” is used to denote sugars. Like glucose, fructose and sucrose. Fun fact over.)
  4. The live and active probiotic cultures in yogurt eat most of the lactose, but to ensure that all the lactose gets obliterated, we add lactase, a naturally occurring enzyme that breaks down the lactose into its component sugars, glucose and galactose, which are easily digested by everyone.

Remember that sugar, lactose? Of course you do. Well, the human body produces an enzyme called lactase to help in the digestion of lactose. This is the enzyme that we add to JoeFroyo, which effectively does the work your body would otherwise be asked to do.


In lactose intolerant people, the body doesn’t produce enough lactase and is unable to fully process the sugar in milk, resulting in – well, you know what it results in.
